Recipe – Rocky Road

I am always on a mission to make regular cakes and other treats in a healthy way. For me, life without  cakes and puddings is just not as enjoyable.

This rocky road is vegan, gluten free and sugar free (apart from the marshmellows which you could substitute if you want).


75g vegan marshmellows

75g chopped brazil nuts

100g dark chocolate (I used Green & Blacks)

1tbsp nut butter

50g coconut oil

To make: melt the coconut oil, chocolate and nut butter, stiring them to mix. Mix in the brazil nuts and marshmellows then pour into a square tin. Leave them to set in the fridge then cut and enjoy.
