Carrot cake

Carrot cake

Cake always goes down well in my family so I am often on the hunt for a healthy version. This cake was a hit.

Ingredients:

1 cup ground almonds

2 cups grated carrot

1/4tsp baking soda

5 eggs (or egg replacer)

1/2 cup melted coconut oil

1/2 cup raisens

1/2 cup chopped walnuts

1/3 cup agave

 

Mix everything together and bake in a cake tin at 180c for 30-40 minuts.

Top with regular icing or make your own healthy version mixing cream cheese with a dash of agave.
